Sweet-N-Spicy bacon is brine soaked for 2 weeks and then dry rubbed with maple, black pepper, and cayenne. This is then slow smoked in a mix of hickory and mesquite smoke for at least 12 hours until an internal temperature of 165 is reached to give this bacon a sweet taste with a spicy kick. This is then sliced to order and vacuum sealed for freshness.
